Personal Challenge: February – Conclusion

As the final day of February is upon us, I am now able to look back on this month and see how I did with this month’s personal challenge.

For my second personal challenge of the year, I wanted to see the benefits of introducing a better habit into my life by eating breakfast every day. 

I managed to get through the entire month without pouring a bowl of cereal! I challenged myself to try new things, make healthy choices and to think outside of the box. This helped keep my mornings exciting, having a new taste to try out in the morning.

I have probably always known that oatmeal is really good for you, how I find that a bowl of oatmeal is boring and bland. Fortunately, I learnt to use that to my advantage. Something healthy and bland is a base to make a breakfast treat. By adding carrots, coconut, raisins and spices your breakfast becomes a healthy carrot cake. You can also bake your oatmeal with bananas and pecans for a banana bread breakfast. There are so many things that I have yet to try in my oatmeal and hopefully will continue to explore.

Another things that I finally got around to trying is avocado toast. I was hesitant to try it for  a long time because I didn’t think that I would like the taste in relation to breakfast. Turns out that I was wrong. I loved it! It was super quick to make, quick to eat and quite refreshing. To make it a little exciting, add some garlic, some lemon juice, maybe a bit of paprika… Yummmm

I also went back to an old classic I used to eat regularly; muffins omelets! They are easy to make in advance, can be made with a wide variety of contents and oh so tasty.

To help myself succeed with this challenge, I would made something in a large batch to last the whole week. If I got bored of eating that, I would break it up one day with a bagel or avocado toast.

Although I ate breakfast on the regular, I did  not follow all of the rules. I got lazy about eating before leaving home and often took breakfast with me to work. Getting up earlier is starting to feel normal and my mornings in general definitely feel less stressful. This was a positive habit to get into and I will hopefully continue down this breakfast filled path.
