You may be looking at the title “Dairy & Sugar Free Fudgsicles” and wondering if I have officially lost my marbles. I promise, I still have my marbles and am super excited to tell you more.
How does someone get a fudgsicle without them you ask? Well let me tell you!
The journey started just this evening when I penned my Personal Challenge for May, giving up the sugary treats… Because of this extreme heat that we have had here in Alberta, I knew that I would need something cold and delicious to help until the weather gets more with the season.
As most ladies seem to do, I took to Pinterest to find myself a solution. I am convinced that one can find solutions to all life issues on Pinterest, and these fudgsicles are another piece of evidence in their favour.
What I found was Gal On A Mission’s recipe. Because I didn’t have enough popsicle molds to make the full recipe, I made a couple of modifications. Here is what I did:
Ingredients:
- 1 avocado, pitted & diced
- 1/4 cup + 1 tbsp coco powder
- 1/4 cup of honey
- 1 splash of Mexican vanilla
- 1/4 cup of coconut milk
All of the ingredients go into either a blender or a food processor until smooth.
What you get looks just like a decadent pudding. I forced myself not to pour it into my mouth but did swipe my finger through what was in the lid to try. IT WAS AMAZING.
I scooped the majority of the mix into my 3 popsicle molds and top it off with a tiny bit of coconut milk to help fill in the air bubbles.
With the left overs, I grabbed my strawberries and dipped them in the concoction. Boy was that ever a treat.
